
I can eat an unhealthy amount of these!
Here’s what you need!
Ingredients
• 4 large green bell peppers (can use red if you prefer)
• 1 lb of lean ground beef or turkey
• 1 tbsp chopped onion
• 1 cup of cooked rice (Minute Rice is what I use)
• 1 tsp. salt
• 1/8 tsp. garlic salt
• 1 can tomato sauce (15 oz)
• 1 – 1 1/2 cup shredded mozzarella cheese
Instructions
1. Preheat oven to 350 degrees.
2. Cut a circle around the top of the pepper so you can remove the top.
3. Use a spoon and scoop out all of the seeds and membranes inside of the pepper.
4. Add the peppers to a pot of water. Heat to boiling and cook for 5-7 minutes and then drain.
5. While peppers are boiling, brown the ground beef (or turkey) until cooked through.
6. Add in onion and cook until softened.
7. Drain and return to the skillet.
8. Mix in 1/4 – 1/3 cup of cheese.
9. Add the rice, salt, garlic salt, and tomato sauce to the beef. Cook until all is hot.
10. Spoon the beef mixture into the peppers.
11. Stand upright in a small baking dish
12. Cover with foil and bake for 45 min.
13. Uncover and sprinkle with cheese.
14. Bake until cheese is melted.
