Taco Pasta
This recipe I got from Rachel Granstra, which you can find her farm wife recipe book here https://rachelgranstra.com/pages/search-results-page?q=recipe+book There are a lot of good recipes in this book and super easy ones too! I will type this one up really quick for you! I made this and took it to the guys tonight for supper in the field. 1 box small shell pasta, 2lbs ground beef, 4 Tbsp taco seasoning, 1 Tbsp worcestershire sauce, 2.5 cups jarred salsa, 1 can dices tomatoes with juice, 1 can corn (drained), 1.5 cups cheddar cheese shredded, salt and pepper to taste. Cook pasta and ground beef then mix all ingredients together! It’s that easy and it has a yummy bold flavor! Done within 20-30 minutes.
Mediterranean Bean Salad

Crockpot Teriyaki Pork Chops
Ingredients:
4 Pork chops, about 1 inch thick
2 garlic cloves
2 T brown sugar
1/4 C soy sauce
1/3 C chicken broth
Salt/pepper
Instructions:
Sprinkle salt and pepper on pork chops if desired, place in a gallon sized freezer bag. In a small bow mix garlic, brown sugar, soy sauce, and chicken broth together, add to bag, then empty all in the crock-pot. Cook on high 4-5 hours or low 6-7 hours. You can also lay the freezer bag flat in the freezer and take out to thaw in fridge overnight before making.
Crunchy Onion Chicken
Ingredients:
1 1/3 C French fried onions
1lb. boneless skinless chicken breast
1 egg beaten
Instructions:
Crush fried onions in plastic bag. Dip chicken into egg, then coat in crumbs. Bake @ 400 degrees for 20 minutes or until cooked through. Add extra fried onions on top of the chicken.
Italian Chicken, Potatoes, Green Beans

Meatballs
I have never made meatballs before in my life until last year. I made them and this meal can easily be turned into a freezer meal. This was a hit for the field and at home! I am the only one who loves onions, so I don’t use them in the recipe, and with little ones I don’t add in the pepper flakes. Enchilada Stuffed Shells
Ingredients:
2lbs ground beef browned and drained (taco seasoning – optional)
1 can refried beans
8oz. shredded colby jack cheese
8oz. shredded pepper jack cheese
2 cans enchilada sauce
Scallions, chopped
Box of pasta shells, cooked and cooled
Instructions:
Spoon some enchilada sauce on bottom of 9×13 pan. Mix beans and cooked hamburger and 3/4 of shredded cheese. Spoon beans, cheese, meat filling into the boiled shells and place into dish. Cover Shells with remaining enchilada sauce and cheese. Cook at 350 degrees until cheese is bubbly. Top with scallions and serve.
Chicken and Noodles
This is another highly requested meal around here! I make it in the Instant pot, and honestly cannot find the link where I got it from originally so here is a screen shot I took of it a long time ago.

Hamloaf
Seriously the easiest thing ever. I love Fareway’s hamloaf. I normally do 2lbs. All you do is put the hamloaf in a glass bread pan pretty much, and layer the top with your favorite BBQ sauce. Place in the oven at 325 degrees for 1 hour per pound. That’s it! Slice it up and serve it.
Chicken and Rice casserole
Ingredients:
1 can of Cream of Mushroom soup
1 c. water
3/4 c uncooked rice (not minute rice)
1/4 t. pepper
4 boneless skinless chicken breasts
Instructions:
In a 2qt. shallow baking dish, mix soup, water, rice and pepper. Place chicken on rice mixture. Sprinkle with additional pepper. Cover and bake at 375 for 45 minutes or until done.
Baked Ziti

Roast
Grab your favorite cut of roast add potatoes, carrots, and any other veggies you want into a crock-pot. Cover it all with water and set crock-pot on low for 6-8 hours.

5 Minute Coleslaw

Corn Casserole
Ingredients:
1 can corn (drained)
1 can cream corn
1 stick of butter
1 cup of elbow noodles
1 cup Velveeta cheese
Instructions:
Cook noodles a little over halfway, then add everything into a crock-pot on high for a hour. Stirring occasionally. I always double mine because it’s a family favorite!
“Mac & Cheese with Meat in it”
It’s as simple as it sounds. Literally a pound of ground beef cooked, and then 2-3 boxes of Mac & Cheese made per box instructions. Mix it all together and you have yourself Mac & Cheese with meat in it. Literally the MOST requested meal and I am not even kidding. It’s one of those meals I make when it’s late and need something quick! Hands down so yummy!

Hot Ham & Cheese
The simplest, and I probably don’t even need instructions on this but I will anyways! These were always my favorite when growing up! Hamburger buns, your choice of ham, shredded mozzarella cheese, butter. Butter your buns, place your ham on one side, put shredded cheese on both sides of the buns, and nuke it in the microwave at 30 second intervals until cheese is melted. Enjoy!

Homemade Nacho Cheese

KFC Famous Bowl
Another super fast and easy meal to make! Not much prep work in it at all! You need Popcorn Chicken, canned corn, mashed potatoes, shredded cheese, and gravy! Prepare chicken and mashed potatoes per usual. Then you mix everything into your bowl and enjoy! Not all our kiddos are a fan of mixing it all together, so we usually just leave theirs separate and they love that! So easy!
Baked Goulash
Ingredients
1lb ground beef
2/3 Cup chopped onion
Pepper to taste
2 t minced garlic
1 C dry elbow pasta
1 15oz. can tomato sauce
1 can diced tomatoes
1 t soy sauce
1 t sugar
1 t dried oregano
2 t dried basil
1 t dried parsley
1 C shredded cheddar cheese
1/2 C shredded mozzarella
Directions
Preheat oven to 350, cook pasta, and brown ground beef with the onions if using and pepper to taste. When there is a minute left to the ground beef add your minced garlic to the beef. Drain extra grease if needed. Boil your noodles half way and they will cook more in the oven. While noodles are cooking, add tomato sauce, diced tomatoes, soy sauce, sugar, dried oregano, basil, parsley, and shredded cheddar cheese together until well mixed and cheese is melted. Once combined add the noodles to the mixture. Prepare a 9×13 baking dish by spraying it with non-stick spray. Dump mixture into the pan, and add the mozzarella cheese on top. Place in the oven for 30 minutes and once it’s done let it rest for five minutes before eating.
Taco Meatballs
Ingredients
2lbs ground beef
1 Egg
1 onion to taste (my family doesn’t like so I don’t use)
1/4 t Salt
1/4 t Pepper
1 C Minute rice
1 Can Cheddar Cheese Soup
Sauce
1 pkg Taco Seasoning
1 15 oz. Can Tomato Sauce
1/2 Can Water
Instructions
Beat the egg, then add the hamburger, rice, onion, salt and pepper. Make into meatballs. Put into 9×13 pan. Mix sauce, then pour over meatballs. Top with 1 can of cheddar cheese soup. Bake at 350 degrees for 1 hour.

Chicken Enchiladas
Chicken Breast-2 to 3 large cans (It is by the tuna cans at the store) You could also buy chicken breast from the meat counter and boil/shred your own. Cans are faster…
1 package shredded cheddar cheese
1 8 oz. container of sour cream
1 can of cream of chicken soup
1 can of green chiles (They are in small cans near the Mexican food)
1 pkg. of medium flour tortillas…I like the extra soft ones.
Any additional toppings for when done baking: tomatoes, onions, olives, cheese, salsa, sour cream, etc.
Preheat oven to 350 degrees.
Drain your chicken. In a bowl, mix together your chicken, 1 container of sour cream, 1 can of cream of chicken soup, and can of green chiles. Add some cheese (I just guess)…Maybe half of a bag or less…It’s up to you. I sprinkle in a LITTLE bit of chili powder and pepper to taste.
Next spray a 9 x 13 Pyrex dish with cooking spray. Warm up your flour tortillas in the microwave so they are warm and bend easily. Use a paper plate to lay your tortillas on and spoon in the chicken filling (from above) You can kind of guess how much filling to put in each one. You’ll want to save some to put over top when done rolling. Roll them up and put the seam side DOWN in your Pyrex dish. They should be touching and you may need to squish them together in order to make them all fit.
If you have leftover chicken filling, I like to pour it over top of the enchiladas. Cover with aluminum foil and put them in the oven for about 30 minutes. You can take them out a few minutes before/after and add more shredded cheese on top. Put them back in the oven until the cheese has melted. You’ll be able to tell when they are done, because the filling kind of “melts.”

Air Fryer Hamburgers
Form your patties and place them in the basket of the air fryer. Set temperature to 370 degrees, and cook for 11 minutes, flipping patties half way through cooking time. If cheese is desired add cheese onto pattiese and cook for an additional minute.

Preheat the smoker to 220, and let the loin smoke for 2 1/2 to 3 hours until it reaches an internal temp of 145! It tastes like you have been in the kitchen cooking all day!
Sour Cream Potatoes/Cheesy potatoes
Another family favorite!
2lb bag of frozen Mr. Dell potatoes
1/2 c of chopped onion
2 Sticks of butter
Salt and Pepper
1 can Cream of Mushroom soup
1 cup sour cream
1 pkg mild cheddar cheese
2 cups corn flakes
Mix all together in large bowl (potatoes, onion, salt pepper, can of soup, package of cheese, and 1 stick of butter) Mix well and put into a 9 x 13 glass casserole dish. Then melt one more stick of butter and pour over the mixture and then take the 2 cups of corn flakes (I like to crunch them up a bit) and place over potato mix. Bake for 350 degrees for 45 minutes to an hour.
Baked Beans
2 cans of Pork n Beans
4 T brown sugar
3 T ketchup
3 or 4 slices of bacon, cut up in bite size pieces
Small onions chopped
Salt and pepper
Mix all together and bake at 350 degrees for 1 hour.

3lbs. Ham Loaf
2 Eggs
1 Cup milk
! cup Crushed graham crackers
Topping:
1 Can tomato soup
1 Cup brow sugar
1/2 Cup white vinegar
1 tsp mustard
Mix together hamloaf, eggs, milk, and graham crackers and form into balls. Mix topping together and heat. Pour topping over ham balls and bake at 350 for 1 hour and 15 minutes. If you prefer more sauce it can easily be doubled.

Small Onion chopped
1/2 Green Pepper Chopped
1 tsp. dry mustard
1 tsp. Chili powder
1 jar Heinz Chili Sauce
2 tsp. sugar
2 Tbsp Vinegar
1 can tomato soup
2 Tbsp flour
Cook hamburger, onion, and green pepper together until brown. Drain grease and then mix the rest of the ingredients but the flour. Mix until well combined. Then add the flour to help thicken it.

Bachelor Biscuit Bake
This is a hand me down recipe from Sam’s mom. I used to make this all the time, and haven’t for a while so I am bringing it back out!
Ingredients:
2-3 cups cooked chicken/shredded
1 c shredded mozzarella
1 tsp. lemon juice
1 can cream of chicken soup
1/2 soup can of water or chicken broth
1/4 c mayonnaise
1 1/2 tubes Grands flaky biscuits
Instructions
Combine chicken, cheese, lemon juice, soup, water or broth, and mayo. Pour into a greased 9 x 13 pan. Bake at 350 degrees for 45 minutes. Place biscuits on top and bake until biscuits are done. (According to directions on the tube)

Portabella Mushroom Pasta
Ingredients
1 C. chicken broth
2 garlic cloves (minced)
3 T. butter
6 oz. portabella mushrooms sliced (or a few more)
8 oz. fettuccine pasta, cooked
1 red bell pepper, sliced
2 oz. feta cheese, crumbled (or shredded parmesan)
Directions
Bring 3/4 cup broth to a boil in a large skillet. Add garlic and butter. Add mushrooms and cook on high heat until liquid is reduced by half. Add cooked pasta, red pepper, and remaining broth. Then serve, and add your choice of Feta or other cheese to your serving. I also love this recipe the next day. I think the flavor enhances overnight!

Steak Soup
Family favorite recipe from when I was a kid! Although, the husband doesn’t want me wasting a tasty steak for soup…so I just use ground beef instead and it’s still just as delicious!
Ingredients:
2 pkgs. Stew Vegetables (frozen)
1 pkg. Okra (Frozen)
1 – 2 containers of mushrooms, cut up
3 Cans beefy mushroom soup
Sirloin tip steak, cut into thin bite size pieces – this is where I substitute a pound of ground beef.
Onion, cut up (Optional)
Salt and Pepper
Directions:
Mix and place this all in crockpot on high for 5-6 hours. You can substitute and put in whatever vegetables you like.

PF Chang’s Chicken Lettuce Wraps
These are super simple and delicious! I could probably eat the whole thing to myself! They are a hit in our household.
INGREDIENTS:
1lb ground chicken
1 SM onion diced
1Tbs sesame oil
1Tbs ground ginger
1Tbs minced garlic
2tbs rice wine vinegar
4-6 tbs hoisin sauce
Soy sauce to taste
1 8oz can diced water chestnuts
Chopped green scallions
1 head of lettuce
INSTRUCTIONS:
Brown your ground chicken, add in onion, sesame oil, ground ginger, minced garlic, rice vinegar, hoisin sauce and soy. Cook until thickens.
Turn off heat, add in your water chestnuts and scallions. Stir and serve on your lettuce slices.
Cowboy Casserole
Indgredients:
1 1/2 lbs ground cooked beef
1 medium onion chopped and cooked with your ground beef
Garlic cook with your ground beef
1 can whole kernel corn drained
1 can cream of mushroom soup
2 cups cheddar cheese
1/2 cups milk
8 oz. sour cream
1 bag of tator tot
Directions:
Layer the bottom of a greased 3 quart casserole dish with 3/4 of the tator tots, combine the rest of the ingredients pour over tator tots, top with the rest of the tots and sprinkle some cheese. Bake uncovered at 350 for 40 minutes.

Easy Potato Soup
This is my momma’s recipe, and I always remember asking her to make it because I love it so much! We will see if I can get it to taste like hers!
Ingredients:
1 Bag Mr. Dells Southern Style Hasbrowns (2 lb. bag)
1 sm. to med. chopped onion (I won’t use this because of everyone else in the family)
1/4 tsp. of celery salt and celery seeds
Cut up carrots
2 cups milk
3/4 of a stick of butter
1 cup Velveeta cheese- small cubes (Can add more for cheesier soup)
Salt and pepper
Directions:
Boil potatoes, carrots, and onions until done. (Tender) Drain 1/2 to 3/4 of the water off. Add milk, add salt and pepper to taste, add 1/4 tsp celery salt and seeds, add 3/4 stick of butter. Then add melted or small cubed pieces of Velveeta cheese. (1 cup at least) and can add more to make it cheesier.
Golden Spiral Noodles
This is an old recipe, and I am surprised I haven’t shared this before!
Ingredients:
1 lb. ground beef
1 medium onion, chopped
1 medium green pepper, chopped
1 can condensed golden mushroom soup, undiluted
1 can 8 oz. tomato sauce
1-1/2 cups shredded cheddar cheese, divided
1 package spiral pasta, cooked and drained
Directions:
In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Add soup, tomato sauce, 1 cup cheese and salt. Stir in pasta. Transfer to a greased 2-1/2 qt. baking dish. Sprinkle with remaining cheese. Bake, uncovered, at 350 degrees for 30 minutes or until bubbly.
Crockpot Pepper Jack Chicken
This is a new recipe for us, but it sounds delicious! I can’t wait to try it out!
Ingredients:
3.5 lbs boneless skinless chicken thighs or breasts
1 tsp onion powder
1 tsp garlic poweder
2 tsp cumin
salt and pepper to taste
10 oz whole frozen green beans (I probably won’t add these)
1 bell pepper sliced/seeded (Going to use 2)
8 oz. fresh mushroom sliced
1/4 cup butter
10 slices pepper jack cheese
Directions:
Place chicken in the bottom of slow cooker with garlic powder, onion powder, cumin and salt and pepper. Layer frozen green beans if you are using, then mushrooms then peppers. Season again with salt and pepper, top with butter and cook on low 4-6 hours until chicken shreds easily when stirred. Stir until chicken is shredded then top with cheese and cook until melted.
