Wednesday: Leftovers
Thursday: Mac and cheese with meat in it. Two boxes of your favorite Mac and cheese and one pound of ground beef browned. Make Mac and cheese per box. Brown beef and drain. Add to Mac and cheese.
Friday: Taco Soup
Ingredients:
1 lb. ground beef
1 small onion
1 16 oz. can chili beans with liquid (can use Mexican style chili beans)
1 15 oz. can kidney beans with liquid
1 15 oz. can whole kernel corn with liquid
1 8 oz. can tomato sauce
2 c. water
2 14.5 oz. cans peeled, diced tomatoes (can use Mexican style if desired)
1 4 oz. can diced green chili peppers
1 pkg. taco seasoning
Instructions:
In a skillet, brown the ground beef over medium heat. Drain. Combine the other 9 ingredients with the ground beef until blended. Put in a slow cooker on low setting for 8 hours. Serve with your favorite toppings: crushed taco chips, cheese, sour cream, etc.
