
It has been a long time since I have posted a weekly menu. To be honest, I have been slacking in that department. Whoops! After harvest I just got burnt out, and needed a break. From going 3-5ish days making a full meal with sides, and dessert I was mentally and physically done for awhile. Here is our menu for the week! I am excited to try these, they are all new to us meals and I can’t wait to share them with you!

Friday: Chicken Chili Here is the recipe from our family cookbook:
Ingredients:
1 can black beans
1 can white beans
1 can red beans
1 can corn
1 can rotel
1 can chicken
1 package ranch dressing mix
1 small Onion – diced
1-2 jalapenos (optional)
Instructions: Combine all of the above in crock-pot and cook on low for 3-4 hours. Don’t drain or rinse anything. Serve with tortilla chips, cheese, and sour cream.
