What’s for supper?

I stuck to our menu pretty good last week except Friday! Rylee decided to go out for softball, and her practice is on fridays. I pushed that meal to this week! See below what we have on our menu for the week!

Monday: Tator tot casserole

Ingredients:

  • ½ bags (16 Oz Bag) Frozen Tater Tots
  • 1 pound Lean Ground Beef
  • 1 can (10.75 Oz Can) Fiesta/Spicy Cheese Soup
  • 1 can (10.75 Oz. Can) Cream Of Mushroom Soup
  • 4 Tablespoons Sour Cream
  • 1-½ cup Shredded Cheddar Cheese

Preparation Instructions:

  1. Preheat oven to 375F.
  2. While the oven is preheating, throw tater tots on a pan and toss in the oven.
  3. Cook beef thoroughly over medium heat until well browned, making sure it’s crumbled well. Drain grease.
  4. In an 8×11 glass baking dish, mix beef, both soups and sour cream together. Top with shredded cheese.
  5. Then add preheated tater tots on top of the shredded cheese in rows, making sure there are no gaps in between each tot.
  6. Place in the oven for 30 minutes.

Wednesday: On the go supper, two practices in one night…means uncrustables or a lunch meat sandwich with some other things to eat.

Friday: Pork fritters, has to be something quick and easy since we have practice this night. I buy them from Walmart and fry them in a pan for literally two minutes. Add it to a bun with your favorite toppings and you’re good to go! These are what I use Pork Fritters
